ON PREPARING LEMONS

Lemons are harvested between April and July. Their outside envelope—the pericarp—is lightly to heavily bumpy and shot through with tiny pouches, filled with an aromatic liquid that contains the fruit’s essence. Under the outer skin is a white, spongy pith called the albedo. Then comes the pulp of the fruit, divided into segments. For the cold extraction of lemon essential oil, the fruit is both pressed and grated. A centrifuge separates the essential oil from the resulting juice. It is also possible to grate the rind the old-fashioned way, to physically rupture the aromatic pouches.
